Considered the No.1 dish of Jiangsu cuisine, the fish is deep fried, as a result it becomes both crisp and tender, and it has a tomato flavour that is both sweet and sour. According to legend about this dish, it has the appearance of a ‘squirrel’ hence the Chinese name of ‘松鼠'(Sōng Shǔ). Though the cooked fish has the appearance of a squirrel, it is both sweet and sour and both healthy and delicious. It is usually served with rice and other dishes and not normally on its own.
